The organic durum wheat used in the production of this pasta is sown between November and January, in rotation with pulses and horticultural and forage crops.

The removal of weeds is solely carried out by mechanical means, without any use of synthetic substances. The harvest takes place at full maturity, between mid-June and the end of July, depending on vintages and altitudes.

The semolina is cold pressed in order to preserve its organoleptic properties.

Extruded through bronze, it presents a rough and porous texture, ideal to capture and enhance sauces and condiments.
