Fratelli Burgio cream of bottarga is made from cured, tuna roe that has been rubbed with salt and left to dry using ancient techniques. The product is then blended and seasoned with extra-virgin olive oil, Syracuse IGP lemon peel and a pinch of red pepper. Delicious on toasted bread or for seasoning pasta dishes.
