Obtained exclusively from the millenary and centenary trees of the cultivar known as Zaituna, the olives are harvested by hand picking, minimizing the risk of damage to the fruit.
With an intense and structured taste, it has an intense green color with golden shades.
On the nose it is characterized by a persistent fruity aroma and evident notes of almond, artichoke leaf and green tomato.
On the palate it presents an elegant and complex taste: the bitter is enveloping and the spicy taste capable of lasting for several minutes in the throat.
