The Sicilian Aged Pecorino is one of the oldest cheeses among those produced in Italy, it was recognized as a designation of origin in 1955, in 1996 it received the protected designation of origin and is produced exclusively with sheep’s milk in the Sicilian territory. The long aging of 36 months gives the pecorino a superior quality and a tastier and more decisive taste.
